TOASTING NUTS

For almost every recipe that calls for almonds, pecans, pistachios, hazelnuts, etc, I pre-toast the nuts for extra flavor.  Very easy to do and make a big difference, especially in baked goods where the nut flavor is predominant.  Toast your nuts either in the oven or on the stove:

oven method: Preheat oven to 350°F.  Place nuts in one layer on a heavy baking sheet.  Bake until nuts are browned & fragrant, about 8-10 minutes.  Check about halfway through, using a spatula to scatter the nuts and check for brownness.

stovetop method: Handy for when you’ve got a small quantity.  Use a dry, nonstick skillet over medium-low heat and stir frequently.  Nuts will brown more quickly on the stove than in the oven, so watch them closely.

Whichever way you decide to toast your nuts, cool them a bit before chopping by hand or in your trusty food processor.
